Homemade Hawaiian Carrot Pineapple Cake is a moist, tropical-inspired dessert combining grated carrots, crushed pineapple, warm spices, and a rich cream cheese frosting for a sweet and flavorful treat.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 3/4 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup shredded coconut (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat granulated sugar, brown sugar, eggs, and oil until smooth.
  4. Stir in grated carrots, crushed pineapple, and vanilla.
  5. Gradually add dry ingredients to wet ingredients and mix until just combined.
  6. Fold in nuts and coconut if using.
  7. Pour batter into prepared pan and spread evenly.
  8. Bake for 40–45 minutes until a toothpick inserted comes out clean.
  9. Cool completely before frosting.
  10. Beat cream cheese and butter until smooth, then add powdered sugar.
  11. Spread frosting evenly over cooled cake and serve.
