Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 3/4 cup vegetable oil
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup shredded coconut (optional)
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat granulated sugar, brown sugar, eggs, and oil until smooth.
- Stir in grated carrots, crushed pineapple, and vanilla.
- Gradually add dry ingredients to wet ingredients and mix until just combined.
- Fold in nuts and coconut if using.
- Pour batter into prepared pan and spread evenly.
- Bake for 40–45 minutes until a toothpick inserted comes out clean.
- Cool completely before frosting.
- Beat cream cheese and butter until smooth, then add powdered sugar.
- Spread frosting evenly over cooled cake and serve.
Notes
- Drain pineapple well to avoid excess moisture.
- Can be baked as two 9-inch round cakes.
