Description

Juicy Hawaiian Chicken Kebabs made with marinated chicken, sweet pineapple, and colorful vegetables, grilled to perfection with a sweet and savory island-style flavor.


Ingredients

  • 1 1/2 pounds boneless skinless chicken breast, cut into chunks
  • 1 1/2 cups pineapple chunks (fresh or canned, drained)
  • 1 red bell pepper, cut into squares
  • 1 green bell pepper, cut into squares
  • 1 red onion, cut into chunks
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon black pepper
  • Wooden or metal skewers


Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a bowl, whisk together pineapple juice, soy sauce, olive oil, brown sugar, garlic, ginger, and black pepper.
  3. Add chicken to the marinade, cover, and refrigerate for at least 30 minutes or up to 4 hours.
  4. Preheat grill to medium-high heat.
  5. Thread marinated chicken, pineapple, bell peppers, and onion onto skewers.
  6. Grill kebabs for 10–12 minutes, turning occasionally, until chicken is fully cooked and lightly charred.
  7. Remove from grill and rest for 5 minutes before serving.

Notes

  • Do not over-marinate chicken as pineapple juice can soften it too much.
  • These kebabs can also be cooked in the oven or on a grill pan.
  • Serve with rice or a fresh salad.
