Description
Juicy Hawaiian Chicken Kebabs made with marinated chicken, sweet pineapple, and colorful vegetables, grilled to perfection with a sweet and savory island-style flavor.
Ingredients
- 1 1/2 pounds boneless skinless chicken breast, cut into chunks
- 1 1/2 cups pineapple chunks (fresh or canned, drained)
- 1 red bell pepper, cut into squares
- 1 green bell pepper, cut into squares
- 1 red onion, cut into chunks
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon black pepper
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes.
- In a bowl, whisk together pineapple juice, soy sauce, olive oil, brown sugar, garlic, ginger, and black pepper.
- Add chicken to the marinade, cover, and refrigerate for at least 30 minutes or up to 4 hours.
- Preheat grill to medium-high heat.
- Thread marinated chicken, pineapple, bell peppers, and onion onto skewers.
- Grill kebabs for 10–12 minutes, turning occasionally, until chicken is fully cooked and lightly charred.
- Remove from grill and rest for 5 minutes before serving.
Notes
- Do not over-marinate chicken as pineapple juice can soften it too much.
- These kebabs can also be cooked in the oven or on a grill pan.
- Serve with rice or a fresh salad.
