Description

Greek honey cake is a moist and aromatic dessert made with olive oil, warm spices, and soaked in fragrant honey syrup, offering a rich Mediterranean flavor.


Ingredients

  • 250 g all-purpose flour
  • 150 g granulated sugar
  • 120 ml olive oil
  • 120 ml milk
  • 3 large eggs
  • 120 g Greek honey
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 120 ml water (for syrup)
  • 80 g honey (for syrup)
  • 1 tbsp lemon juice


Instructions

  1. Preheat the oven to 180°C (350°F) and grease a cake pan.
  2. In a bowl, whisk eggs and sugar until light and fluffy.
  3. Add olive oil, milk, vanilla extract, orange zest, and honey. Mix well.
  4. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, and cloves.
  5. Gradually add dry ingredients to the wet mixture and mix until smooth.
  6. Pour batter into the prepared pan and bake for 35–40 minutes until a toothpick comes out clean.
  7. Meanwhile, prepare the syrup by simmering water, honey, and lemon juice for 5 minutes.
  8. Pour warm syrup over the hot cake and allow it to absorb completely.
  9. Let cool before slicing and serving.
