Description

Greek Feta & Cucumber Bite Skewers are fresh and vibrant appetizer bites made with crisp cucumber, creamy feta, juicy cherry tomatoes, and briny olives, drizzled with olive oil and herbs.


Ingredients

  • 1 large English cucumber, sliced into thick rounds
  • 8 oz block feta cheese, cut into 1-inch cubes
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives, pitted
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • Fresh parsley or dill, chopped (optional)
  • 1216 small appetizer skewers or toothpicks


Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, oregano, and black pepper.
  2. Thread one cucumber slice, one cube of feta, one cherry tomato, and one olive onto each skewer.
  3. Arrange skewers on a serving platter.
  4. Drizzle the olive oil dressing evenly over the skewers.
  5. Sprinkle with fresh parsley or dill if desired.
  6. Chill for 15–20 minutes before serving for best flavor.
