Greek Feta & Cucumber Bite Skewers are fresh and vibrant appetizer bites made with crisp cucumber, creamy feta, juicy cherry tomatoes, and briny olives, drizzled with olive oil and herbs.
Ingredients
- 1 large English cucumber, sliced into thick rounds
- 8 oz block feta cheese, cut into 1-inch cubes
- 1 cup cherry tomatoes
- 1/2 cup Kalamata olives, pitted
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried oregano
- 1/4 teaspoon black pepper
- Fresh parsley or dill, chopped (optional)
- 12–16 small appetizer skewers or toothpicks
Instructions
- In a small bowl, whisk together olive oil, lemon juice, oregano, and black pepper.
- Thread one cucumber slice, one cube of feta, one cherry tomato, and one olive onto each skewer.
- Arrange skewers on a serving platter.
- Drizzle the olive oil dressing evenly over the skewers.
- Sprinkle with fresh parsley or dill if desired.
- Chill for 15–20 minutes before serving for best flavor.

- Use high-quality block feta for better texture and flavor.
- Add a small folded basil leaf for extra freshness.
- Can be assembled up to 4 hours in advance and kept refrigerated.
