Ingredients
- 4 white fish fillets (such as cod or halibut)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 can (14 oz) crushed tomatoes
- 1/2 cup cherry tomatoes, halved
- 1/3 cup pitted Kalamata olives, sliced
- 2 tablespoons capers, drained
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
Instructions
- Season the fish fillets with salt and black pepper.
- Heat olive oil in a large skillet over medium heat.
- Add garlic and red pepper flakes; sauté for 30 seconds until fragrant.
- Stir in crushed tomatoes, cherry tomatoes, olives, capers, and oregano. Simmer for 5–7 minutes.
- Nestle the fish fillets into the sauce.
- Cover and cook for 8–10 minutes, or until fish flakes easily with a fork.
- Drizzle with lemon juice and sprinkle with fresh parsley before serving.
