Description

Firecracker Meatballs are juicy, oven-baked meatballs coated in a sweet, spicy, and tangy firecracker sauce, making them perfect as an appetizer or a bold main dish served over rice or noodles.


Ingredients

  • 1 lb ground chicken (or ground beef)
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons green onions, finely chopped
  • 1/3 cup hot sauce
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha (optional, for extra heat)
  • 1 teaspoon cornstarch mixed with 2 teaspoons water


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground meat, breadcrumbs, egg, garlic, ginger, salt, pepper, and green onions. Mix until just combined.
  3. Form the mixture into evenly sized meatballs and place them on the prepared baking sheet.
  4. Bake for 18–22 minutes, or until fully cooked and lightly browned.
  5. While the meatballs bake, combine hot sauce, honey, soy sauce, rice vinegar, and sriracha in a saucepan over medium heat.
  6. Stir in the cornstarch slurry and simmer until the sauce thickens slightly.
  7. Toss the cooked meatballs in the firecracker sauce until well coated.
  8. Serve hot, garnished with extra green onions if desired.

Notes

  • Adjust the spice level by increasing or reducing the hot sauce.
  • These meatballs can also be made in an air fryer.
  • Great served over jasmine rice or as party appetizers.
