Fajita Chicken Casserole Bake is a flavorful, oven-baked dish featuring tender chicken, bell peppers, onions, fajita spices, and melted cheese for an easy, family-friendly meal.
Ingredients
- 2 lbs boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 1 packet fajita seasoning (or 2 tablespoons homemade)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella or Monterey Jack cheese
- Salt to taste
- Black pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a casserole dish.
- In a large bowl, toss chicken with olive oil, fajita seasoning, salt, and pepper.
- Add sliced bell peppers and onion; mix until evenly coated.
- Spread the mixture evenly into the prepared casserole dish.
- Cover with foil and bake for 25 minutes.
- Remove foil, sprinkle cheddar and mozzarella cheese evenly on top.
- Bake uncovered for an additional 10–15 minutes until chicken is cooked through and cheese is melted and bubbly.
- Let rest for 5 minutes before serving.
Notes
- Serve with rice, tortillas, or over cauliflower rice for a low-carb option.
- Add sliced jalapeños for extra heat.
- Leftovers store well for up to 3 days in the refrigerator.
