Description

Fajita Chicken Casserole Bake is a flavorful, oven-baked dish featuring tender chicken, bell peppers, onions, fajita spices, and melted cheese for an easy, family-friendly meal.


Ingredients

  • 2 lbs boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 1 packet fajita seasoning (or 2 tablespoons homemade)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a casserole dish.
  2. In a large bowl, toss chicken with olive oil, fajita seasoning, salt, and pepper.
  3. Add sliced bell peppers and onion; mix until evenly coated.
  4. Spread the mixture evenly into the prepared casserole dish.
  5. Cover with foil and bake for 25 minutes.
  6. Remove foil, sprinkle cheddar and mozzarella cheese evenly on top.
  7. Bake uncovered for an additional 10–15 minutes until chicken is cooked through and cheese is melted and bubbly.
  8. Let rest for 5 minutes before serving.
