Ingredients

  • 1 lb ground beef
  • 1 cup uncooked long-grain white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 1/2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and cook until softened, about 3 minutes.
  4. Add ground beef and garlic; cook until beef is browned. Drain excess fat.
  5. Season with salt, pepper, and paprika.
  6. In a large bowl, combine cooked beef, uncooked rice, cream of mushroom soup, diced tomatoes, and beef broth.
  7. Transfer mixture to a greased 9×13-inch baking dish and spread evenly.
  8. Cover tightly with foil and bake for 45 minutes.
  9. Remove foil, sprinkle cheese on top, and bake uncovered for another 10–15 minutes until rice is tender and cheese is melted.
  10. Let rest for 5 minutes before serving.
