Ingredients
- 1 lb ground beef
- 1 cup uncooked long-grain white rice
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 1/2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add onion and cook until softened, about 3 minutes.
- Add ground beef and garlic; cook until beef is browned. Drain excess fat.
- Season with salt, pepper, and paprika.
- In a large bowl, combine cooked beef, uncooked rice, cream of mushroom soup, diced tomatoes, and beef broth.
- Transfer mixture to a greased 9×13-inch baking dish and spread evenly.
- Cover tightly with foil and bake for 45 minutes.
- Remove foil, sprinkle cheese on top, and bake uncovered for another 10–15 minutes until rice is tender and cheese is melted.
- Let rest for 5 minutes before serving.

- You may substitute ground turkey for a lighter option.
- Add frozen vegetables like peas or corn for extra nutrition.
