Description

Crispy potato pie is a savory, golden-brown dish made with thinly sliced potatoes layered with cheese, cream, and seasonings, then baked until tender inside and irresistibly crisp on top.

Ingredients

  • 2 lbs (900 g) potatoes, thinly sliced
  • 1 small onion, finely sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or ovenproof skillet.
  2. In a bowl, combine sliced potatoes, onion, garlic, salt, pepper, and thyme.
  3. Layer half of the potato mixture into the prepared dish.
  4. Sprinkle half of the mozzarella and Parmesan over the layer.
  5. Add remaining potatoes and top with remaining cheese.
  6. Pour heavy cream evenly over the top.
  7. Drizzle melted butter and olive oil over everything.
  8. Cover with foil and bake for 40 minutes.
  9. Remove foil and bake an additional 25–30 minutes until the top is golden brown and crispy.
  10. Let rest for 10 minutes before slicing. Garnish with fresh parsley and serve.

Notes

  • Use starchy potatoes like Russet for extra crispiness.
  • For a richer flavor, add cooked bacon or caramelized onions between layers.
  • A mandoline helps achieve evenly thin slices.
  • Allowing the pie to rest helps it set for cleaner slices.
