Ingredients
- 2 lbs (900 g) potatoes, thinly sliced
- 1 small onion, finely sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream
- 2 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or ovenproof skillet.
- In a bowl, combine sliced potatoes, onion, garlic, salt, pepper, and thyme.
- Layer half of the potato mixture into the prepared dish.
- Sprinkle half of the mozzarella and Parmesan over the layer.
- Add remaining potatoes and top with remaining cheese.
- Pour heavy cream evenly over the top.
- Drizzle melted butter and olive oil over everything.
- Cover with foil and bake for 40 minutes.
- Remove foil and bake an additional 25–30 minutes until the top is golden brown and crispy.
- Let rest for 10 minutes before slicing. Garnish with fresh parsley and serve.

- Use starchy potatoes like Russet for extra crispiness.
- For a richer flavor, add cooked bacon or caramelized onions between layers.
