Ingredients
- 2 large boneless skinless chicken breasts, halved lengthwise
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups seasoned breadcrumbs
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded mozzarella cheese
- 4 sandwich buns
- 2 tbsp olive oil (for frying)
- 2 cups shredded green cabbage
- 1/2 cup shredded carrots
- 1/4 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1 tsp honey
Instructions
- Season chicken with salt, pepper, garlic powder, and paprika.
- Set up a breading station: flour in one bowl, beaten eggs in another, breadcrumbs in a third.
- Dredge chicken in flour, dip in eggs, then coat with breadcrumbs.
- Heat olive oil in a skillet over medium heat.
- Cook chicken for 4–5 minutes per side until golden and cooked through.
- Sprinkle mozzarella over each piece, cover, and cook until melted.
- In a bowl, mix cabbage, carrots, mayonnaise, apple cider vinegar, and honey to make the slaw.
- Toast sandwich buns lightly.
- Assemble sandwiches with crispy mozzarella chicken and a generous spoonful of tangy slaw.
- Serve immediately while hot and crispy.

- Use panko breadcrumbs for extra crispiness.
- Chicken can be baked at 400°F (200°C) for 20–25 minutes as a lighter option.
