Ingredients

  • 2 large boneless skinless chicken breasts, halved lengthwise
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups seasoned breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 4 sandwich buns
  • 2 tbsp olive oil (for frying)
  • 2 cups shredded green cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp honey


Instructions

  1. Season chicken with salt, pepper, garlic powder, and paprika.
  2. Set up a breading station: flour in one bowl, beaten eggs in another, breadcrumbs in a third.
  3. Dredge chicken in flour, dip in eggs, then coat with breadcrumbs.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook chicken for 4–5 minutes per side until golden and cooked through.
  6. Sprinkle mozzarella over each piece, cover, and cook until melted.
  7. In a bowl, mix cabbage, carrots, mayonnaise, apple cider vinegar, and honey to make the slaw.
  8. Toast sandwich buns lightly.
  9. Assemble sandwiches with crispy mozzarella chicken and a generous spoonful of tangy slaw.
  10. Serve immediately while hot and crispy.

Notes

  • Use panko breadcrumbs for extra crispiness.
  • Chicken can be baked at 400°F (200°C) for 20–25 minutes as a lighter option.
