Description

Crispy, golden-brown fish bites are tender chunks of white fish coated in seasoned batter and fried until crunchy on the outside and flaky inside, perfect as a snack or appetizer.


Ingredients

  • 500 g white fish fillets (cod or haddock), cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1 cup cold sparkling water
  • Oil for frying
  • Lemon wedges (for serving)


Instructions

  1. Pat fish pieces dry with paper towels.
  2. In a bowl, whisk flour, cornstarch, baking powder, salt, black pepper, paprika, and garlic powder.
  3. Gradually whisk in cold sparkling water to form a smooth batter.
  4. Heat oil to 175°C (350°F) in a deep pan.
  5. Dip fish pieces into batter, allowing excess to drip off.
  6. Carefully place into hot oil and fry in batches for 3–4 minutes until golden brown.
  7. Remove and drain on paper towels.
  8. Serve hot with lemon wedges or dipping sauce.

Notes

  • Do not overcrowd the pan while frying.
  • Use cold sparkling water for extra crispiness.
  • Best served immediately for maximum crunch.
