Description
Creamy Tuscan Salmon is a rich and flavorful dish featuring pan-seared salmon fillets simmered in a creamy garlic sauce with sun-dried tomatoes and spinach, inspired by Tuscan-style flavors.
Ingredients
- 4 salmon fillets (about 6 oz each)
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/3 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh basil or parsley, chopped
Instructions
- Season salmon fillets with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear salmon for 4–5 minutes per side until golden and just cooked through. Remove and set aside.
- In the same skillet, melt butter and add garlic; sauté for 30 seconds until fragrant.
- Add chicken broth and simmer for 2 minutes, scraping up any browned bits.
- Stir in heavy cream, Parmesan cheese, Italian seasoning, and sun-dried tomatoes.
- Simmer for 4–5 minutes until the sauce thickens slightly.
- Add spinach and cook until wilted.
- Return salmon to the skillet and spoon sauce over the fillets.
- Simmer for 2 minutes, garnish with basil or parsley, and serve.
Notes
- Serve with pasta, rice, or mashed potatoes.
- You can substitute half-and-half for a lighter sauce.
- Do not overcook the salmon to keep it tender and flaky.
