Creamy Tuscan Salmon is a rich and flavorful dish featuring pan-seared salmon fillets simmered in a creamy garlic sauce with sun-dried tomatoes and spinach, inspired by Tuscan-style flavors.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh basil or parsley, chopped


Instructions

  1. Season salmon fillets with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear salmon for 4–5 minutes per side until golden and just cooked through. Remove and set aside.
  4. In the same skillet, melt butter and add garlic; sauté for 30 seconds until fragrant.
  5. Add chicken broth and simmer for 2 minutes, scraping up any browned bits.
  6. Stir in heavy cream, Parmesan cheese, Italian seasoning, and sun-dried tomatoes.
  7. Simmer for 4–5 minutes until the sauce thickens slightly.
  8. Add spinach and cook until wilted.
  9. Return salmon to the skillet and spoon sauce over the fillets.
  10. Simmer for 2 minutes, garnish with basil or parsley, and serve.
