Ingredients
- 12 oz (340 g) penne pasta
- 1 lb (450 g) boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp fresh parsley, chopped
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add the chicken pieces, season with salt and pepper, and cook until golden and cooked through. Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth and simmer for 2 minutes, scraping up any browned bits.
- Add heavy cream, Italian seasoning, and red pepper flakes if using. Stir and simmer until slightly thickened.
- Stir in Parmesan cheese until melted and smooth.
- Return the cooked chicken to the skillet and add the cooked penne pasta.
- Toss everything together until evenly coated in the sauce.
- Garnish with fresh parsley and serve warm.
Notes
- Use freshly grated Parmesan for the best sauce texture.
- Add spinach or mushrooms for extra vegetables.
- If the sauce thickens too much, add a splash of pasta water.
