Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup dried cranberries
- 1/2 cup cream cheese, softened
- 1/4 cup shredded mozzarella or Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp dried thyme or Italian seasoning
Instructions
- Preheat oven to 190°C (375°F).
- Cut a pocket lengthwise into each chicken breast.
- In a bowl, mix spinach, dried cranberries, cream cheese, shredded cheese, and garlic.
- Stuff each chicken breast evenly with the filling.
- Season chicken with salt, pepper, paprika, and thyme.
- Heat olive oil in an oven-safe skillet over medium heat.
- Sear stuffed chicken breasts for 2–3 minutes per side until lightly golden.
- Transfer skillet to the oven and bake for 20–25 minutes until chicken is cooked through.
- Remove from oven and rest for 5 minutes before serving.
