Cranberry Spinach Stuffed Chicken is a flavorful baked chicken dish filled with tangy dried cranberries, tender spinach, and creamy cheese, offering a perfect balance of savory and sweet.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup cream cheese, softened
  • 1/4 cup shredded mozzarella or Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp dried thyme or Italian seasoning


Instructions

  1. Preheat oven to 190°C (375°F).
  2. Cut a pocket lengthwise into each chicken breast.
  3. In a bowl, mix spinach, dried cranberries, cream cheese, shredded cheese, and garlic.
  4. Stuff each chicken breast evenly with the filling.
  5. Season chicken with salt, pepper, paprika, and thyme.
  6. Heat olive oil in an oven-safe skillet over medium heat.
  7. Sear stuffed chicken breasts for 2–3 minutes per side until lightly golden.
  8. Transfer skillet to the oven and bake for 20–25 minutes until chicken is cooked through.
  9. Remove from oven and rest for 5 minutes before serving.
