A rich, creamy, and flavorful queso dip packed with savory ground beef, spicy jalapeños, and melty cheese, perfect for dipping chips or as a topping for tacos and nachos.
Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (4 oz) diced green chilies
- 1 cup heavy cream
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup cream cheese, softened
- 1–2 jalapeños, chopped (adjust to taste)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and black pepper to taste
- 1 tbsp olive oil
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the ground beef, onion, and garlic, cooking until the beef is browned and the onion is softened.
- Drain any excess fat and stir in the diced tomatoes with green chilies, green chilies, chili powder, cumin, and jalapeños. Cook for 2–3 minutes until heated through.
- Reduce the heat to low and stir in the heavy cream, cream cheese, and both cheeses. Cook, stirring constantly, until the cheese is fully melted and the dip is smooth.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh cilantro if desired. Pair with tortilla chips, tacos, or nachos.
Notes
- If you like extra spice, feel free to add more jalapeños or some hot sauce.
- You can make this dip ahead of time and reheat it gently over low heat before serving.
- For a smoky flavor, add a pinch of smoked paprika.
