Description

A rich, creamy, and flavorful queso dip packed with savory ground beef, spicy jalapeños, and melty cheese, perfect for dipping chips or as a topping for tacos and nachos.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (4 oz) diced green chilies
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup cream cheese, softened
  • 12 jalapeños, chopped (adjust to taste)
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro for garnish (optional)


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the ground beef, onion, and garlic, cooking until the beef is browned and the onion is softened.
  2. Drain any excess fat and stir in the diced tomatoes with green chilies, green chilies, chili powder, cumin, and jalapeños. Cook for 2–3 minutes until heated through.
  3. Reduce the heat to low and stir in the heavy cream, cream cheese, and both cheeses. Cook, stirring constantly, until the cheese is fully melted and the dip is smooth.
  4. Season with salt and black pepper to taste.
  5. Serve hot, garnished with fresh cilantro if desired. Pair with tortilla chips, tacos, or nachos.

Notes

  • If you like extra spice, feel free to add more jalapeños or some hot sauce.
  • You can make this dip ahead of time and reheat it gently over low heat before serving.
  • For a smoky flavor, add a pinch of smoked paprika.
