Ingredients
- 4 bone-in chicken thighs or drumsticks, skin removed
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1/2 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
- Salt to taste
- Black pepper to taste
- Fresh parsley or basil for garnish (optional)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Season chicken with salt and pepper, then brown on both sides for 4–5 minutes per side. Remove and set aside.
- In the same pan, add onion and bell peppers; sauté for 4–5 minutes until softened.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in crushed tomatoes, chicken broth, oregano, basil, thyme, and red pepper flakes.
- Return chicken to the pan, nestling it into the sauce.
- Reduce heat to low, cover, and simmer for 35–40 minutes until chicken is tender and fully cooked.
- Adjust seasoning if needed and garnish with fresh herbs before serving.
Notes
- Serve over pasta, rice, or with crusty bread.
- Boneless chicken breasts can be used but require shorter cooking time.
- Leftovers taste even better the next day.
