Description

A classic Italian comfort dish featuring tender chicken simmered in a rich tomato sauce with onions, peppers, garlic, and herbs, delivering deep, rustic flavors perfect for a hearty meal.


Ingredients

  • 4 bone-in chicken thighs or drumsticks, skin removed
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley or basil for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Season chicken with salt and pepper, then brown on both sides for 4–5 minutes per side. Remove and set aside.
  3. In the same pan, add onion and bell peppers; sauté for 4–5 minutes until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in crushed tomatoes, chicken broth, oregano, basil, thyme, and red pepper flakes.
  6. Return chicken to the pan, nestling it into the sauce.
  7. Reduce heat to low, cover, and simmer for 35–40 minutes until chicken is tender and fully cooked.
  8. Adjust seasoning if needed and garnish with fresh herbs before serving.

Notes

  • Serve over pasta, rice, or with crusty bread.
  • Boneless chicken breasts can be used but require shorter cooking time.
  • Leftovers taste even better the next day.
