Description

Cinnamon Roll Cheesecake Cookies are soft, bakery-style cookies combining a rich cream cheese dough with warm cinnamon swirl flavor and a sweet cheesecake-like center.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons melted butter (for cinnamon swirl)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, cream cheese, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually mix dry ingredients into the wet mixture until a soft dough forms.
  6. In a small bowl, combine brown sugar, cinnamon, and melted butter.
  7. Scoop cookie dough onto the baking sheet and swirl a small amount of cinnamon mixture into each cookie.
  8. Bake for 12–14 minutes, until edges are set and centers remain soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Do not overbake to keep cookies soft and cheesecake-like.
  • Chill dough briefly if too soft to handle.
