Description
Cinnamon Roll Cheesecake Cookies are soft, bakery-style cookies combining a rich cream cheese dough with warm cinnamon swirl flavor and a sweet cheesecake-like center.
Ingredients
- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup brown sugar
- 1 tablespoon ground cinnamon
- 2 tablespoons melted butter (for cinnamon swirl)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter, cream cheese, and granulated sugar until smooth.
- Beat in the egg and vanilla extract until fully combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually mix dry ingredients into the wet mixture until a soft dough forms.
- In a small bowl, combine brown sugar, cinnamon, and melted butter.
- Scoop cookie dough onto the baking sheet and swirl a small amount of cinnamon mixture into each cookie.
- Bake for 12–14 minutes, until edges are set and centers remain soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Do not overbake to keep cookies soft and cheesecake-like.
- Chill dough briefly if too soft to handle.
- Optional drizzle with cream cheese glaze after cooling.
