Ingredients
- For the crepes:
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/4 cups whole milk
- 1 tablespoon granulated sugar
- 1/2 teaspoon ground cinnamon
- 1 tablespoon melted butter
- 1/4 teaspoon salt
- For the caramelized pears:
- 3 ripe but firm pears, peeled and sliced
- 2 tablespoons unsalted butter
- 1/3 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- In a bowl, whisk together flour, eggs, milk, sugar, cinnamon, melted butter, and salt until smooth. Let batter rest for 15–20 minutes.
- Heat a lightly greased nonstick skillet over medium heat.
- Pour about 1/4 cup batter into the pan, swirling to coat evenly. Cook for 1–2 minutes per side until lightly golden. Repeat with remaining batter and set aside.
- In another skillet, melt butter over medium heat.
- Add sliced pears, brown sugar, cinnamon, lemon juice, and vanilla. Cook for 6–8 minutes until pears are tender and caramelized.
- Spoon caramelized pears onto each crepe and fold or roll.
- Drizzle extra caramel sauce from the pan over the top and serve warm.
