Description

Ingredients

  • For the crepes:
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups whole milk
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon melted butter
  • 1/4 teaspoon salt
  • For the caramelized pears:
  • 3 ripe but firm pears, peeled and sliced
  • 2 tablespoons unsalted butter
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract


Instructions

  1. In a bowl, whisk together flour, eggs, milk, sugar, cinnamon, melted butter, and salt until smooth. Let batter rest for 15–20 minutes.
  2. Heat a lightly greased nonstick skillet over medium heat.
  3. Pour about 1/4 cup batter into the pan, swirling to coat evenly. Cook for 1–2 minutes per side until lightly golden. Repeat with remaining batter and set aside.
  4. In another skillet, melt butter over medium heat.
  5. Add sliced pears, brown sugar, cinnamon, lemon juice, and vanilla. Cook for 6–8 minutes until pears are tender and caramelized.
  6. Spoon caramelized pears onto each crepe and fold or roll.
  7. Drizzle extra caramel sauce from the pan over the top and serve warm.
