Description

Chocolate Raspberry Mousse Cake is a decadent layered dessert featuring a rich chocolate cake base topped with a smooth chocolate mousse and bright raspberry flavor, finished with an elegant cocoa or chocolate garnish.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 8 oz semi-sweet chocolate, chopped
  • 1 1/2 cups heavy whipping cream
  • 1/2 cup raspberry puree or seedless raspberry jam
  • 2 tablespoons powdered sugar
  • Fresh raspberries for garnish (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat sugar, eggs, oil, milk, and vanilla until smooth.
  4. Combine wet and dry ingredients and mix until just combined.
  5. Pour batter into prepared pan and bake for 25–30 minutes until a toothpick comes out clean.
  6. Cool cake completely and keep in the pan.
  7. Melt chocolate gently over a double boiler and let cool slightly.
  8. Whip heavy cream with powdered sugar until soft peaks form.
  9. Fold melted chocolate and raspberry puree gently into whipped cream.
  10. Spread mousse evenly over the cooled cake.
  11. Refrigerate for at least 4 hours until set.
  12. Garnish with fresh raspberries before serving.
