Chocolate Raspberry Mousse Cake is a decadent layered dessert featuring a rich chocolate cake base topped with a smooth chocolate mousse and bright raspberry flavor, finished with an elegant cocoa or chocolate garnish.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 8 oz semi-sweet chocolate, chopped
- 1 1/2 cups heavy whipping cream
- 1/2 cup raspberry puree or seedless raspberry jam
- 2 tablespoons powdered sugar
- Fresh raspberries for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease an 8-inch round cake pan.
- In a bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat sugar, eggs, oil, milk, and vanilla until smooth.
- Combine wet and dry ingredients and mix until just combined.
- Pour batter into prepared pan and bake for 25–30 minutes until a toothpick comes out clean.
- Cool cake completely and keep in the pan.
- Melt chocolate gently over a double boiler and let cool slightly.
- Whip heavy cream with powdered sugar until soft peaks form.
- Fold melted chocolate and raspberry puree gently into whipped cream.
- Spread mousse evenly over the cooled cake.
- Refrigerate for at least 4 hours until set.
- Garnish with fresh raspberries before serving.
