Ingredients

  • 1 pre-baked 9-inch pie crust
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 1/2 cups whole milk
  • 4 large egg yolks
  • 6 oz semi-sweet chocolate, chopped
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/3 cup granulated sugar (for meringue)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a saucepan, whisk together sugar, cornstarch, and salt.
  3. Gradually whisk in milk and cook over medium heat until thickened.
  4. In a bowl, lightly beat egg yolks. Slowly whisk in some hot mixture, then return all to the saucepan.
  5. Cook for 2 minutes, then remove from heat and stir in chocolate, butter, and vanilla until smooth.
  6. Pour chocolate filling into the baked pie crust.
  7. In a clean bowl, beat egg whites with cream of tartar until soft peaks form.
  8. Gradually add sugar and beat until stiff, glossy peaks form.
  9. Spread meringue over the hot filling, sealing edges to the crust.
  10. Bake for 12–15 minutes until meringue is golden brown.
  11. Cool completely before slicing.

Notes

  • Seal the meringue to the crust to prevent shrinking.
  • Use room-temperature egg whites for best volume.
