Ingredients
- 1 pre-baked 9-inch pie crust
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 1/2 cups whole milk
- 4 large egg yolks
- 6 oz semi-sweet chocolate, chopped
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 4 large egg whites
- 1/4 teaspoon cream of tartar
- 1/3 cup granulated sugar (for meringue)
Instructions
- Preheat oven to 350°F (175°C).
- In a saucepan, whisk together sugar, cornstarch, and salt.
- Gradually whisk in milk and cook over medium heat until thickened.
- In a bowl, lightly beat egg yolks. Slowly whisk in some hot mixture, then return all to the saucepan.
- Cook for 2 minutes, then remove from heat and stir in chocolate, butter, and vanilla until smooth.
- Pour chocolate filling into the baked pie crust.
- In a clean bowl, beat egg whites with cream of tartar until soft peaks form.
- Gradually add sugar and beat until stiff, glossy peaks form.
- Spread meringue over the hot filling, sealing edges to the crust.
- Bake for 12–15 minutes until meringue is golden brown.
- Cool completely before slicing.
Notes
- Seal the meringue to the crust to prevent shrinking.
- Use room-temperature egg whites for best volume.
- Chill the pie for cleaner slices.
