Description

Chicken enchilada casserole is a flavorful layered dish made with tender shredded chicken, tortillas, enchilada sauce, and melted cheese baked into a comforting family-style meal.


Ingredients

  • 600 g cooked chicken breast, shredded
  • 10 small corn tortillas, cut into strips
  • 500 ml red enchilada sauce
  • 200 g shredded cheddar or Mexican blend cheese
  • 1 small onion, finely chopped
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • Fresh cilantro, chopped (optional)


Instructions

  1. Preheat the oven to 190°C (375°F) and grease a baking dish.
  2. Heat olive oil in a skillet and sauté onion until softened.
  3. Add shredded chicken, cumin, chili powder, garlic powder, and salt. Stir to combine.
  4. Spread a thin layer of enchilada sauce on the bottom of the baking dish.
  5. Layer tortilla strips, chicken mixture, enchilada sauce, and cheese.
  6. Repeat layers until ingredients are used, finishing with cheese on top.
  7. Cover with foil and bake for 25 minutes.
  8. Remove foil and bake an additional 10–15 minutes until bubbly and lightly golden.
  9. Garnish with fresh cilantro before serving.

Notes

  • Use rotisserie chicken to save time.
  • You can substitute green enchilada sauce if preferred.
  • Let rest for 10 minutes before serving for cleaner slices.
