Description
Chicken enchilada casserole is a flavorful layered dish made with tender shredded chicken, tortillas, enchilada sauce, and melted cheese baked into a comforting family-style meal.
Ingredients
- 600 g cooked chicken breast, shredded
- 10 small corn tortillas, cut into strips
- 500 ml red enchilada sauce
- 200 g shredded cheddar or Mexican blend cheese
- 1 small onion, finely chopped
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 2 tbsp olive oil
- Fresh cilantro, chopped (optional)
Instructions
- Preheat the oven to 190°C (375°F) and grease a baking dish.
- Heat olive oil in a skillet and sauté onion until softened.
- Add shredded chicken, cumin, chili powder, garlic powder, and salt. Stir to combine.
- Spread a thin layer of enchilada sauce on the bottom of the baking dish.
- Layer tortilla strips, chicken mixture, enchilada sauce, and cheese.
- Repeat layers until ingredients are used, finishing with cheese on top.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake an additional 10–15 minutes until bubbly and lightly golden.
- Garnish with fresh cilantro before serving.
Notes
- Use rotisserie chicken to save time.
- You can substitute green enchilada sauce if preferred.
- Let rest for 10 minutes before serving for cleaner slices.
