Description
A classic creamy cheesecake with a buttery graham cracker crust, topped with a sweet and glossy strawberry topping for a perfect dessert.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup unsalted butter, melted
- 2 tbsp granulated sugar (for crust)
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 2 cups fresh strawberries, sliced
- 1/4 cup sugar (for topping)
- 1 tbsp cornstarch
- 1/2 cup water
Instructions
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar.
- Press mixture firmly into the bottom of a greased springform pan.
- Bake crust for 10 minutes and set aside.
- In a bowl, beat cream cheese and 3/4 cup sugar until smooth.
- Add eggs one at a time, mixing well after each.
- Blend in sour cream and vanilla extract.
- Pour filling over prepared crust.
- Bake for 45–50 minutes until center is just set.
- Turn off oven and let cheesecake cool inside with door slightly open for 30 minutes.
- Refrigerate for at least 4 hours before topping.
- For topping, combine strawberries, 1/4 cup sugar, cornstarch, and water in a saucepan.
- Cook over medium heat until thickened; cool slightly.
- Spoon strawberry topping over chilled cheesecake before serving.
