Description

A classic creamy cheesecake with a buttery graham cracker crust, topped with a sweet and glossy strawberry topping for a perfect dessert.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 2 tbsp granulated sugar (for crust)
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1/4 cup sugar (for topping)
  • 1 tbsp cornstarch
  • 1/2 cup water


Instructions

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar.
  3. Press mixture firmly into the bottom of a greased springform pan.
  4. Bake crust for 10 minutes and set aside.
  5. In a bowl, beat cream cheese and 3/4 cup sugar until smooth.
  6. Add eggs one at a time, mixing well after each.
  7. Blend in sour cream and vanilla extract.
  8. Pour filling over prepared crust.
  9. Bake for 45–50 minutes until center is just set.
  10. Turn off oven and let cheesecake cool inside with door slightly open for 30 minutes.
  11. Refrigerate for at least 4 hours before topping.
  12. For topping, combine strawberries, 1/4 cup sugar, cornstarch, and water in a saucepan.
  13. Cook over medium heat until thickened; cool slightly.
  14. Spoon strawberry topping over chilled cheesecake before serving.
