Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups apples, peeled and finely diced
  • 1/2 cup caramel sauce
  • 1/2 cup heavy cream
  • 2 cups powdered sugar


Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well, then stir in vanilla.
  5. Gradually mix in dry ingredients, alternating with milk.
  6. Fold in diced apples.
  7. Fill cupcake liners about 3/4 full.
  8. Bake for 18–22 minutes until a toothpick comes out clean.
  9. Cool cupcakes completely.
  10. Beat caramel sauce, heavy cream, and powdered sugar to make frosting.
  11. Frost cupcakes and drizzle with extra caramel if desired.
