Description

Cajun Seafood & Chicken Okra Stew is a bold, hearty Southern-style stew made with tender chicken, mixed seafood, okra, and aromatic Cajun spices simmered in a rich tomato-based broth.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, cut into chunks
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb crab meat or crawfish tails
  • 2 cups fresh or frozen sliced okra
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • 2 tablespoons chopped fresh parsley
  • Cooked white rice, for serving


Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add onion, bell pepper, and celery; cook until softened.
  3. Stir in garlic and cook until fragrant.
  4. Add chicken pieces and cook until lightly browned.
  5. Season with Cajun seasoning, smoked paprika, thyme, black pepper, and salt.
  6. Add diced tomatoes and chicken broth, stirring to combine.
  7. Bring to a simmer and cook for 20 minutes.
  8. Add okra and continue simmering for 10 minutes.
  9. Stir in shrimp and crab or crawfish; cook for 5–7 minutes until seafood is cooked through.
  10. Taste and adjust seasoning as needed.
  11. Garnish with parsley and serve hot over rice.

Notes

  • Do not overcook seafood to keep it tender.
  • Frozen okra works well and helps reduce slime.
  • Add hot sauce for extra Cajun heat.
