Description
Cajun Seafood & Chicken Okra Stew is a bold, hearty Southern-style stew made with tender chicken, mixed seafood, okra, and aromatic Cajun spices simmered in a rich tomato-based broth.
Ingredients
- 1 lb boneless, skinless chicken thighs or breasts, cut into chunks
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb crab meat or crawfish tails
- 2 cups fresh or frozen sliced okra
- 1 small onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- Salt, to taste
- 2 tablespoons chopped fresh parsley
- Cooked white rice, for serving
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add onion, bell pepper, and celery; cook until softened.
- Stir in garlic and cook until fragrant.
- Add chicken pieces and cook until lightly browned.
- Season with Cajun seasoning, smoked paprika, thyme, black pepper, and salt.
- Add diced tomatoes and chicken broth, stirring to combine.
- Bring to a simmer and cook for 20 minutes.
- Add okra and continue simmering for 10 minutes.
- Stir in shrimp and crab or crawfish; cook for 5–7 minutes until seafood is cooked through.
- Taste and adjust seasoning as needed.
- Garnish with parsley and serve hot over rice.
Notes
- Do not overcook seafood to keep it tender.
- Frozen okra works well and helps reduce slime.
- Add hot sauce for extra Cajun heat.
