Description

Broccoli, Rice, Cheese, and Chicken Casserole is a comforting one-dish meal made with tender chicken, fluffy rice, broccoli florets, and a creamy, cheesy sauce baked until warm and bubbly.


Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 2 cups cooked white rice
  • 2 cups broccoli florets (fresh or frozen)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • Cooking spray or butter for greasing


Instructions

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. If using fresh broccoli, steam lightly until tender-crisp.
  3. In a large bowl, combine cooked chicken, cooked rice, broccoli, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
  4. Stir in 1 cup of cheddar cheese and the mozzarella cheese.
  5. Transfer the mixture to the prepared casserole dish and spread evenly.
  6. Sprinkle remaining cheddar cheese on top.
  7. Bake uncovered for 30–35 minutes until bubbly and lightly golden.
  8. Let rest for 5 minutes before serving.

Notes

  • Use rotisserie chicken to save time.
  • Brown rice can be substituted for white rice.
  • Add breadcrumbs on top for a crunchy finish.
