Description
Broccoli, Rice, Cheese, and Chicken Casserole is a comforting one-dish meal made with tender chicken, fluffy rice, broccoli florets, and a creamy, cheesy sauce baked until warm and bubbly.
Ingredients
- 2 cups cooked chicken breast, shredded or diced
- 2 cups cooked white rice
- 2 cups broccoli florets (fresh or frozen)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt to taste
- Black pepper to taste
- Cooking spray or butter for greasing
Instructions
- Preheat oven to 375°F (190°C) and grease a casserole dish.
- If using fresh broccoli, steam lightly until tender-crisp.
- In a large bowl, combine cooked chicken, cooked rice, broccoli, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
- Stir in 1 cup of cheddar cheese and the mozzarella cheese.
- Transfer the mixture to the prepared casserole dish and spread evenly.
- Sprinkle remaining cheddar cheese on top.
- Bake uncovered for 30–35 minutes until bubbly and lightly golden.
- Let rest for 5 minutes before serving.
Notes
- Use rotisserie chicken to save time.
- Brown rice can be substituted for white rice.
- Add breadcrumbs on top for a crunchy finish.
