Ingredients
- 1 cup unsalted butter, cold and cubed
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 3 cups fresh or frozen blueberries
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 375°F (190°C) and line a 9×13-inch baking pan with parchment paper.
- In a large bowl, combine flour, baking powder, salt, granulated sugar, and brown sugar.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in eggs and vanilla until crumbly dough forms.
- Press half of the dough firmly into the prepared pan.
- In another bowl, toss blueberries with cornstarch and lemon juice.
- Spread blueberry mixture evenly over the crust.
- Crumble remaining dough evenly over the blueberries.
- Bake for 40–45 minutes until the top is lightly golden.
- Cool completely before cutting into bars.
Notes
- Frozen blueberries can be used without thawing.
- Cooling fully helps the bars set properly.
- Dust with powdered sugar before serving if desired.
