Description

Blueberry Crumb Bars are a classic dessert with a buttery crumb crust and topping layered around a sweet-tart blueberry filling, perfect for slicing into bars for snacks or dessert.


Ingredients

  • 1 cup unsalted butter, cold and cubed
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3 cups fresh or frozen blueberries
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice


Instructions

  1. Preheat oven to 375°F (190°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, combine flour, baking powder, salt, granulated sugar, and brown sugar.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in eggs and vanilla until crumbly dough forms.
  5. Press half of the dough firmly into the prepared pan.
  6. In another bowl, toss blueberries with cornstarch and lemon juice.
  7. Spread blueberry mixture evenly over the crust.
  8. Crumble remaining dough evenly over the blueberries.
  9. Bake for 40–45 minutes until the top is lightly golden.
  10. Cool completely before cutting into bars.

Notes

  • Frozen blueberries can be used without thawing.
  • Cooling fully helps the bars set properly.
  • Dust with powdered sugar before serving if desired.
