Ingredients
- 4 medium russet potatoes
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- Fresh herbs (thyme or rosemary), optional
Instructions
- Preheat oven to 425°F (220°C).
- Wash and scrub the potatoes thoroughly; pat dry.
- Using a sharp knife, slice each potato thinly, stopping just before cutting all the way through (place chopsticks or wooden spoons on either side to help).
- Place potatoes on a baking sheet lined with parchment paper.
- Brush potatoes generously with olive oil, making sure oil gets between the slices.
- Season evenly with salt, pepper, garlic powder, and paprika.
- Bake for 45–55 minutes, until potatoes are tender inside and crispy on the edges.
- Remove from oven, garnish with fresh herbs if desired, and serve hot.
Notes
- Russet potatoes work best for crispy edges.
- You can add vegan butter or cheese alternatives for extra flavor.
- For extra crispiness, baste with oil halfway through baking.
