Description
Black Eyed Peas is a hearty and comforting dish made with tender black-eyed peas simmered with aromatics and spices, commonly enjoyed as a nourishing meal or side dish.
Ingredients
- 2 cups dried black-eyed peas
- 6 cups water
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1 tsp salt
- 1 bay leaf
- 2 tbsp chopped fresh cilantro or parsley
Instructions
- Rinse and sort black-eyed peas, removing any debris.
- Soak peas in water for 4–6 hours or overnight, then drain.
- Heat olive oil in a large pot over medium heat.
- Add onion and sauté until soft and translucent.
- Add garlic, cumin, paprika, and black pepper; cook for 30 seconds.
- Add soaked peas, water, salt, and bay leaf.
- Bring to a boil, then reduce heat and simmer uncovered for 35–45 minutes until peas are tender.
- Remove bay leaf and adjust seasoning.
- Garnish with fresh cilantro or parsley and serve warm.
Notes
- Canned black-eyed peas can be used; reduce cooking time to 15 minutes.
- Add tomatoes or chili for extra flavor.
- Leftovers store well in the refrigerator for up to 4 days.
