Description

Fresh rice paper rolls filled with tender seasoned beef, crisp vegetables, and fresh herbs, served with a flavorful dipping sauce for a light and refreshing meal.

Ingredients

  • 12 rice paper wrappers
  • 1 pound beef sirloin, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar
  • 1 clove garlic, minced
  • 1 cup shredded lettuce
  • 1 cup julienned carrots
  • 1 cup julienned cucumber
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup cooked rice noodles (optional)
  • For the Dipping Sauce:
  • 2 tablespoons hoisin sauce
  • 1 tablespoon peanut butter
  • 1 teaspoon lime juice
  • 1 teaspoon soy sauce
  • 12 tablespoons warm water (to thin)

Instructions

  1. In a bowl, marinate beef with soy sauce, fish sauce, sesame oil, brown sugar, and garlic for 10–15 minutes.
  2. Heat a skillet over medium-high heat and cook beef for 2–3 minutes until just cooked through. Set aside to cool slightly.
  3. Prepare dipping sauce by whisking together hoisin sauce, peanut butter, lime juice, soy sauce, and warm water until smooth. Set aside.
  4. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for 5–10 seconds until softened.
  5. Lay softened wrapper on a clean surface. Add lettuce, carrots, cucumber, herbs, rice noodles (if using), and a few slices of beef near the center.
  6. Fold bottom edge over filling, fold in sides, and roll tightly to seal.
  7. Repeat with remaining wrappers and filling.
  8. Serve immediately with dipping sauce.

Notes

  • Do not over-soak rice paper as it continues to soften while assembling.
  • Keep finished rolls covered with a damp towel to prevent drying.
  • Substitute beef with shrimp or tofu if desired.
  • Best enjoyed fresh the same day.
