Description
Beef & Barley Soup is a hearty, comforting soup made with tender chunks of beef, wholesome barley, and vegetables simmered in a rich, savory broth.
Ingredients
- 1 lb beef chuck, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups beef broth
- 3/4 cup pearl barley
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add beef and brown on all sides; remove and set aside.
- In the same pot, add onion, carrots, and celery; cook until softened.
- Stir in garlic and cook for 30 seconds.
- Return beef to the pot and add beef broth, barley, thyme, rosemary, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer covered for 50–60 minutes until beef and barley are tender.
- Remove bay leaf, adjust seasoning, and serve hot.
Notes
- Soup thickens as it cools; add extra broth if needed.
- Can be made in a slow cooker on low for 6–8 hours.
- Tastes even better the next day.
