Description

Beef & Barley Soup is a hearty, comforting soup made with tender chunks of beef, wholesome barley, and vegetables simmered in a rich, savory broth.


Ingredients

  • 1 lb beef chuck, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups beef broth
  • 3/4 cup pearl barley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add beef and brown on all sides; remove and set aside.
  3. In the same pot, add onion, carrots, and celery; cook until softened.
  4. Stir in garlic and cook for 30 seconds.
  5. Return beef to the pot and add beef broth, barley, thyme, rosemary, bay leaf, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer covered for 50–60 minutes until beef and barley are tender.
  7. Remove bay leaf, adjust seasoning, and serve hot.

Notes

  • Soup thickens as it cools; add extra broth if needed.
  • Can be made in a slow cooker on low for 6–8 hours.
  • Tastes even better the next day.
