Description

Beef and Bean Burritos Smothered with Red Chile are hearty burritos filled with seasoned ground beef and beans, wrapped in flour tortillas, then topped with a rich red chile sauce and melted cheese.


Ingredients

  • 1 pound ground beef
  • 1 cup cooked pinto beans (or canned, drained)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt, to taste
  • Black pepper, to taste
  • 6 large flour tortillas
  • 1 1/2 cups red chile sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 2 tablespoons vegetable oil


Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add chopped onion and cook until softened, about 3–4 minutes.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add ground beef and cook until browned, breaking it up as it cooks.
  5. Stir in cumin, chili powder, salt, and black pepper.
  6. Add the beans and cook for 2–3 minutes until heated through. Remove from heat.
  7. Warm the tortillas to make them pliable.
  8. Spoon the beef and bean mixture down the center of each tortilla and roll into burritos.
  9. Place burritos seam-side down in a baking dish.
  10. Pour red chile sauce evenly over the burritos and sprinkle with shredded cheese.
  11. Bake at 375°F (190°C) for 20–25 minutes, until heated through and cheese is melted.
  12. Serve hot.

Notes

  • You can use homemade or store-bought red chile sauce.
  • Adjust spice level by choosing mild or hot chile sauce.
  • Serve with rice, lettuce, or sour cream on the side.
