Description
Beef and Bean Burritos Smothered with Red Chile are hearty burritos filled with seasoned ground beef and beans, wrapped in flour tortillas, then topped with a rich red chile sauce and melted cheese.
Ingredients
- 1 pound ground beef
- 1 cup cooked pinto beans (or canned, drained)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt, to taste
- Black pepper, to taste
- 6 large flour tortillas
- 1 1/2 cups red chile sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 2 tablespoons vegetable oil
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add chopped onion and cook until softened, about 3–4 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until browned, breaking it up as it cooks.
- Stir in cumin, chili powder, salt, and black pepper.
- Add the beans and cook for 2–3 minutes until heated through. Remove from heat.
- Warm the tortillas to make them pliable.
- Spoon the beef and bean mixture down the center of each tortilla and roll into burritos.
- Place burritos seam-side down in a baking dish.
- Pour red chile sauce evenly over the burritos and sprinkle with shredded cheese.
- Bake at 375°F (190°C) for 20–25 minutes, until heated through and cheese is melted.
- Serve hot.
Notes
- You can use homemade or store-bought red chile sauce.
- Adjust spice level by choosing mild or hot chile sauce.
- Serve with rice, lettuce, or sour cream on the side.
