Description
Angel Chicken Rice is a creamy, comforting casserole made with tender chicken breasts simmered in a rich cream cheese and Italian seasoning sauce, served over fluffy rice.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 (8 oz) package cream cheese, softened
- 1 (10.5 oz) can cream of chicken soup
- 1/2 cup chicken broth
- 1 packet Italian dressing seasoning mix
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 cup uncooked white rice
- 2 cups water or chicken broth (for rice)
- Salt and black pepper, to taste
- Fresh parsley, chopped (optional)
Instructions
- Cook rice according to package instructions using water or chicken broth; set aside.
- Season chicken lightly with salt and pepper.
- Heat butter in a large skillet or slow cooker insert over medium heat.
- Add chicken breasts and lightly brown on both sides.
- In a bowl, whisk together cream cheese, cream of chicken soup, chicken broth, Italian seasoning mix, and garlic until smooth.
- Pour the sauce over the chicken.
- Cover and simmer on low heat for 25–30 minutes (or cook on low in a slow cooker for 4–5 hours) until chicken is tender.
- Stir sauce occasionally until creamy and well combined.
- Serve chicken and sauce over prepared rice.
- Garnish with chopped parsley if desired.
Notes
- This recipe can be made in a slow cooker or on the stovetop.
- Serve with steamed vegetables or a green salad.
- Leftovers reheat well and thicken slightly.
