Description

Angel Chicken Rice is a creamy, comforting casserole made with tender chicken breasts simmered in a rich cream cheese and Italian seasoning sauce, served over fluffy rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 (8 oz) package cream cheese, softened
  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 cup chicken broth
  • 1 packet Italian dressing seasoning mix
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 cup uncooked white rice
  • 2 cups water or chicken broth (for rice)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (optional)


Instructions

  1. Cook rice according to package instructions using water or chicken broth; set aside.
  2. Season chicken lightly with salt and pepper.
  3. Heat butter in a large skillet or slow cooker insert over medium heat.
  4. Add chicken breasts and lightly brown on both sides.
  5. In a bowl, whisk together cream cheese, cream of chicken soup, chicken broth, Italian seasoning mix, and garlic until smooth.
  6. Pour the sauce over the chicken.
  7. Cover and simmer on low heat for 25–30 minutes (or cook on low in a slow cooker for 4–5 hours) until chicken is tender.
  8. Stir sauce occasionally until creamy and well combined.
  9. Serve chicken and sauce over prepared rice.
  10. Garnish with chopped parsley if desired.

  • This recipe can be made in a slow cooker or on the stovetop.
  • Serve with steamed vegetables or a green salad.
  • Leftovers reheat well and thicken slightly.
