25 Minute Tzatziki Gyro Rice Bowls are a quick and flavorful meal featuring seasoned gyro-style meat served over fluffy rice with fresh vegetables and creamy homemade tzatziki sauce.


Ingredients

  • 1 lb ground beef or lamb
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups cooked white rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • For the Tzatziki:
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt to taste


Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground beef or lamb and cook until browned, breaking it apart as it cooks.
  2. Stir in oregano, garlic powder, onion powder, cumin, paprika, salt, and pepper. Cook for 2–3 more minutes until fragrant. Remove from heat.
  3. In a bowl, mix together Greek yogurt, grated cucumber, lemon juice, garlic, dill, and salt to make the tzatziki sauce. Refrigerate until ready to use.
  4. Divide cooked rice among serving bowls.
  5. Top with seasoned meat, cherry tomatoes, diced cucumber, red onion, and feta cheese.
  6. Drizzle generously with tzatziki sauce and garnish with fresh parsley. Serve immediately.
